But beer has a great savory taste that just compliments so many foods! Like CHILI. If you haven't added beer to your chili before you are in for a real treat. It's like beer is magical. To some it is magical in other ways but to me the magic happens in the kitchen. Making me a grade A weiner. (Buy a 22 and you'll have some leftover to drink.)
Oh and this masa harina stuff? You will find it in "ethnic" isles of grocery stores by the Mexican food. It's a fine corn flour that is processed with lime (not the green things, mind you.) It's what you make corn tortillas out of. Let me just tell you that homemade corn tortillas are EASY and DIVINE. I can walk you through it if you want at a later date. For this chili the masa harina thickens it up a ton and gives it a great flavor. If you are avoiding corn you can try using some rice flour to thicken it up. I think that will work but I haven't tried it. Let me know if you do!
Thick Quick Healthy Chili
serves 4
1/2 large onion, chopped
1 bell pepper, chopped
2 cloves garlic, minced
1 jalapeno, minced
2 cans beans, drained - approx. 3 cups (used black beans, kidney beans, pinto beans, etc.)
1 (15 oz) can chopped tomatoes
1 TBSP. chili powder
1 tsp. cumin powder
1/4 cup masa harina
2 cups beer (or veggie broth)
1/2 tsp. salt (or to taste)
- In a large pot saute onion, garlic, and jalapeno in 2-4 TBSP. water. Add more water if necessary. Cook until onions are translucent.
- Add in the beans, tomatoes, chili powder, cumin powder and beer. Bring to a simmer over medium-high heat. Simmer for 15-20 minutes. Stir occasionally.
- Stir in masa harina and cook until thickened, 3-5 minutes.
- Add salt to taste.
- Enjoy!
