I loveeeeeeeeee snacks! Even as a kid I loved bean dip. The canned frito-lay bean dip and a bag of fritos was one of my favorite treats from the grocery store. This dip is a lot more fresh and healthier. It's so easy that you won't even want to drive somewhere to get your next dip fix. The chips in the photos are the oven baked potato chips I posted a little while back. I make them ALL THE TIME. Corn chips would be awesome too.
Hey and this is something you could take to a party and no one would notice that it's vegan (You know, the complainers...) So I want to know...what are your favorite snacks?

Bomb Diggity Bean Dip
1.5 cups black beans (1 can drained)
1/2 of a roasted red pepper (~1/4 cup)
1/4 cup cilantro
2 green onions, chopped
1/4 cup pickled jalapenos
2 cloves garlic, crushed
salt to taste
- Blend everything together in a food processor.
- Add salt to taste. (You may need NONE if you use canned beans!)
- Serve warm or cold.
- Enjoy!!
