This is one of those recipes that are just TOO EASY. I love that! Cut something up, throw it in the oven, and you're done. While these are super duper easy they also happen to be FULL of flavor. FULL I tell ya!
Now wait, don't even tell me you don't like beets. You need to revisit them. I'm sure of that. Canned beets or pickled beets aren't really great ways to showcase this lovely vegetable. Beets are like candy. Savory amazing candy. They don't need much to make them shine. Maybe a little bit of salt, some herbs but really they are so flavorful on their own that they just need to be given another chance. So do it, please, for the beets.
Hey and since these are baked they are basically 100% guilt free. Those bags of chips at the store that say guilt free? Nuh uh. These. These are the guilt free ones, my dears.
My kid LOVES LOVES LOVES these! She kept saying "More chips!!!" Kids will like fruits and vegetables if you cook them right and serve them all of the time.
Recipe notes...
*You want to be able to cut these really thin. A mandoline works really well (or v-slicer.) You can also just cut them with a sharp knife.
*Beet chips shrink. A lot. So cut up a ton of beets to get a good serving size.
*Peeling beets can stain your hands (and cutting board) so if you're worried about that please wear gloves.
Beet Chips
4-5 large beets, washed and peeled
kosher salt, to tastes
fresh herbs (thyme is good but also consider trying some chopped rosemary, majoram or oregano for different flavors!), to taste and chopped if large or woody
Preheat your oven to 375 degrees. Line a large baking sheet (or as many as your oven can handle) with parchment paper.
Cut your beets into very thin chips. Try to keep them uniform in size so they all brown up at the same time.
Lay your beets on the parchment in a single layer and lightly sprinkle with salt.
Pop into the oven and bake for 15-20 minutes, or until browned. I would suggest checking after 10 minutes to see how they are progressing. Take any out that are already browning on the edges.
Sprinkle with your fresh herbs and enjoy!

why didn't i think of this!!!!! i LOVE beets, i LOVE chips of all kind but can't do all that oil!!! this is nothing short of brilliant!!
